After my husband separated his shoulder 2 days before New Year’s eve, he was feeling a bit down–he was in pain and not able to do his regular activities. And, since he is normally our cook, that left me to prep meals. I needed something simple that would last for at least a couple of meals, so I found this soup. Turns out my husband loves this soup! Cheered him up and he said it’s now his favourite soup of all time.

Ingredients
  1. 1/4 cup raw walnuts (I used walnuts, but you could also try almonds or pine nuts, or I even tried hazelnuts)
  2. 1 lemon, squeezed (I found 1/2 a lemon was enough if the lemon was big)
  3. 2 pinches fine black pepper
  4. 1 pinch cayenne (optional; I skip this ingredient)
  5. 2 Tbsp extra virgin olive oil
  6. 1 Tbsp hot water
  7. 1/3 cup fresh basil leaves, loosely packed
  8. 1 tsp nutritional yeast (supposed to be optional, but I think it tastes best with this)
Instructions
  1. Add all ingredients to a blender or food processor.
  2. Blend.
  3. Yup, just 2 steps. Easy.
